Sopaipillas( Mexican Fried Bread)

List of Ingredients
- 4 cups flour
- 1 1/4 teaspoons salt
- 1 Tablespoon Baking powder
- 3 Tablespoons sugar, plus additional for dusting
- 2 Tablespoons shortening
- 1 1/4 cups milk, approximately
- Oil for frying
Instructions
- Mix flour, salt, baking powder, and sugar.
- Cut in shortening
- add just enough milk to make a soft, but firm dough.
- Cover bowl and let stand for 30 minutes to 60 minutes.
- Roll dough on lightly floured board to 1/4 inch thick.
and cut into diamond shaped pieces. Heat oil to 375 degrees.
- Add a few pieces of the dough at a time and fry until brown on both sides. Drain on paper towels.
- If desired, sprinkle with additional sugar while still hot or serve with butter.
- Makes about 4 dozen.
Final Comments
I like to make them square and sprinkle with powder white sugar. Almost like the french quarter donut in New Orleans.
