    Sopaipillas( Mexican Fried Bread)

    List of Ingredients


    • 4 cups flour
    • 1 1/4 teaspoons salt
    • 1 Tablespoon Baking powder
    • 3 Tablespoons sugar, plus additional for dusting
    • 2 Tablespoons shortening
    • 1 1/4 cups milk, approximately
    • Oil for frying


    Instructions


    1. Mix flour, salt, baking powder, and sugar.
    2. Cut in shortening
    3. add just enough milk to make a soft, but firm dough.
    4. Cover bowl and let stand for 30 minutes to 60 minutes.
    5. Roll dough on lightly floured board to 1/4 inch thick.
      and cut into diamond shaped pieces. Heat oil to 375 degrees.
    6. Add a few pieces of the dough at a time and fry until brown on both sides. Drain on paper towels.
    7. If desired, sprinkle with additional sugar while still hot or serve with butter.

    8. Makes about 4 dozen.


    Final Comments


    I like to make them square and sprinkle with powder white sugar. Almost like the french quarter donut in New Orleans.
