    1-1/4 cups sugar
    1/2 teaspoon ground cinnamon
    1/2 teaspoon ground nutmeg
    2 eggs
    1 can (12 ounces) evaporated milk
    1 teaspoon vanilla extract
    1-1/2 cups mashed cooked sweet potatoes
    1 unbaked pie crust (9 inches) TOPPING:
    1/3 cup butter or margarine
    1/3 cup all-purpose flour
    1/2 cup packed brown sugar
    1/2 cup shredded coconut
    1/2 cup chopped pecans
    Whipped cream or ice cream

    Recipe




    In a mixing bowl, blend sugar and spices. In another bowl, beat eggs; add milk and vanilla. Combine with sugar mixture. Stir in potatoes; beat until smooth. Pour into pie shell. Bake at 425° for 15 minutes. Reduce heat to 350° and bake an additional 30 minutes. Meanwhile, combine topping ingredients. Sprinkle on pie; return to the oven for 10-15 minutes or until topping is golden brown. Cool on a wire rack. Serve with whipped cream or ice cream. Store in refrigerator. Yield: 6-8 servings. Variation: For pumpkin pie, substitute equal amounts of canned or mashed cooked pumpkin for the 1-1/2 cups mashed cooked sweet potatoes.
