Carrot Cake

List of Ingredients
1 3/4 cup sugar
4 eggs- unbeaten
1 teaspoon salt
3 cups grated carrots
1 1/4 cup wesson oil
2 cups flour
2 teaspoon soda
2 teaspoon powder
2 teaspoon cinnamon
1/2 cup nuts
Recipe
cream sugar and oio. Sift together, flour, baking powder, soda, salt and cinnamon. Add to sugar mixture. Add eggs, one at time, beating after each. Fold in carrots and chopped nuts. Grease and flour three 9 inch pans and bake at 350 degrees for 25 to 30 mintues.
Frosting:
1 large can crushed pineapple
1/2 stick margarine
1 8oz. pkg. cream cheese
2 teaspoon vanilla
1 box confectioners sugar
drain pieapple, reserving some juice. for frosting.
Cream together margarine, cream cheese, vanilla, and confectioner sugar. Add enough pineapple juice to make mixture spread. Place a small amount of frosting - then drained pineapple between each layer.
