    MANNY'S SOUTHERN CATFISH ALMANDINE

    4 Catfish filets
    1 lemon cut in 4 quarter wedges
    butter, about 1 to 3 Tablespoons, more or less
    blanched, slivered almonds
    hot Hungarian paprika

    Recipe





    Put oven to broil. Let oven heat a bit. Put chunchs of butter
    in shallow pan & let met slightly. Meanwhile sprinkle catfish
    fillets with paprika. Lay filets in pan with butter. Broil in broiler for 10 minutes more. Check periodically to make sure they do not burn. Near the end of broiling, squeeze lemon on fish. Sprinkle with Almond slivers. Put fish back into broiler for a few more seconds, browning almonds slightly, but taking care not to burn them. Sprinkle with few more almonds after you take fillets out. Serve to admiring audience.
    * Broiling should take about 20 minutes total.

    NOTE: Manny serves this with pan-fried plantains, baked, buttered sweet potatoes, and an endives and Italian tomato salad or green salad. We like a very cold dry Chablis with this.

    Manny never uses salt, because of his damn sugar Busters diet.
    (You can add your own) and the hot paprika takes the place of pepper, taste better and is better for you.

    This can be prepared. I am told by Le Chef, in a pan on top
    of the stove using butter or olive oil. You may first lightly bread the filets. Dip in an egg wash, then in flour or grated bread crumbs.
