    5 doz. P & J oysters
    1/4 head iceberg lettuce
    3/4 cup fresh greated romana cheese
    3 green onions
    2 garlic toes
    2 pints Half & Half
    2 stalks celery
    1/2 stick butter
    2 boxes frozen spinach leaves (thawed)
    1/2 cup Hersaint or Pernod Liqueur
    1/4 teaspoon cayenne pepper
    salt to taste

    chop in food processor, celery, lettuce, spinach, green onions, and garlic.
    saute in butter, chopped ingrdients in large skillet about 19 minutes over medium - low flame stirring occasionly.
    meanwhile, poach oysters until mantles curl about 4 minutes.
    pour cooked oysters water and cayenne into sauteed ingredients, and stir in chop 2 dozen poached oysters in processor, then put into sauteed ingredients.
    stir in Herbsaint, romana and half & half.
    heat on medium- low flame for about 15 minutes, stirring occasionally.
    salt to taste.
    add whole poached oysters when serving.
    serves 8 large servings.
