    1 large Bell Pepper, chopped
    2 Stalks of celery, chopped
    2 pounds of crawfish Tails
    Seafood stock
    1 large Onion, chopped
    1 Stick of Butter
    Flour
    Salt
    Cayenne, White Pepper, black Pepper, Onion,
    Garlic Powder, to taste.

    Recipe




    In an iron pot, melt butter, add chopped vegetables and let simmer
    until very brown. (about 30 minutes) Stir occasionally. Dust
    with about 1 1/2 Tbsp. of flour, let brown a little longer,
    add crawfish tails, season to taste. Add just enough stock to
    cover, simmer for about another 15 minutes.
    Serve over rice, Immediately
