    German Potato Salad


    List of Ingredients


    • 12 medium Potates (red potatoes are the best)
    • 12 bacon strips
    • 1-1/2 cups chopped onion
    • 1/4 cup all- purpose flour
    • 1/4 cup granulated sugar
    • 1 Tbsp. salt
    • 1 tsp. ground mustard
    • Pinch of pepper
    • 1-1/2 cups water
    • 3/4 cup vinegar
    • chopped fresh parsley


    Instructions


    1. In saucepan, cook potatoes until just tender.
    2. Drain
    3. Peel and slice into large bowl.
    4. Set aside
    5. In a skillet, cook bacon until crisp
    6. Remove bacon to paper towels.
    7. Discard all but 1/3 cups drippings.
    8. Saute onion in drippings until tender
    9. Stir in the next ingredients
    10. Gradually stir in water and vinegar
    11. bring to a boil. Stirring constantly
    12. Cook and stir 2 minutes more
    13. Pour over potatoes.
    14. Crumble bacon and gentlyt stir into potaoes.
    15. Sprinkle with parsley
    16. Yiels: 12 -14 one-half cup servings.
