Turkey Vegetable Soup

List of Ingredients
1/3 cup chopped onions
1/2 cup chopped celery
1/3 cup sliced carrot
1/8 teaspoon ground thyme
1 T. butter
10 1/2 ounces chicken broth
1 soup can water
2 T. dry Barley
1 cup chopped cooked turkey
1T. chopped Parsley
Recipe
In 3 quart sauce pan over medium heat, cook onion, celery, and carrot with
thyme in butter, 2 minutes. Stir in Broth, water and barley. Reduce heat;
simmer 30 minutes; stir. Add turkey and parsley; simmer 5 minutes.
Makes 2 servings.
This is very good. Better double the recipe ... while you at it. You
will want to make more. You can use chicken if you want too.
