    1 egg, beaten
    2 tsp. baking powder
    2 tbsp. flour
    1 medium eggplant, about 1 cup, mashed
    dash each salt, pepper
    1 tsp. butter or margarine, softened


    Recipe




    Peel, slice and cook eggplant in salt water until tender. Drain well, mash; should be about 1 cup. Add beaten egg, flour, baking powder, salt, pepper and butter. Blend well. Drop into deep hot fat in a frying pan, about 370°F [185ºC]). Fry until brown. Alternatively, you can make into patties and fry in just enough oil to keep from sticking..
