    Small Eggplant - peel ed & cut into 1 in.cubes
    4 T. margarine
    1 1/2 lb. hambuer
    1 egg well beaten
    1 med. onion chopped
    salt & pepper,pinch of thyme & basil
    1 cup tomato sauce
    1-2 t.garlic power
    1 T. parsley
    1/3 c.buttered crumbs
    1/2 c. parmeasan cheese

    Recipe




    Saute' eggplant in butter till tender.Combine remaining ingredients except the crumbs& cheese.Place 1/2 the hamburge in a greased pie pan cover with 1/2 eggplant.Repeat layers. Top with the crumbs & cheese.
    Bake 45 min. at 350
