    2½ Tbsp. Dijon mustard
    1/4 tsp. salt
    1/4 tsp. freshly ground black pepper
    1/4 tsp. dried tarragon
    1½ lbs. green beans, trimmed
    2 tsp. butter or stick margarine
    3/4 cup thinly sliced shallots
    2 Tbsp. sour cream

    Recipe





    Combine first 4 ingredients; set aside.

    Steam green beans, covered, 5 minutes or until tender. Keep warm.

    Melt butter in a Dutch oven over medium heat. Add shallots; sauté 3 minutes. Stir in mustard mixture and green beans; toss well. Cook for 2 minutes or until thoroughly heated. Stir in sour cream at the last minute, and remove from heat. Serve immediately. Yield: 10 servings.
