RED BEANS AND RICE

List of Ingredients
2 lbs. of Red Beans (Camille brand)
1 small onion or 1/2 large onion grated
1/4 Bell pepper grated
2 stalks celery, cut into chuncks
6 pieces bacon
1 lb. Hillshire orginal sauage
4 or 5 Tablespoon of margarine
Salt and Pepper to taste

Soak Red beans over night at lease 8 hours.
Add salt and pepper, lots of garlic powder.
Fry bacon until crisp. Drain and let cool.
Reserve Bacon grease.
Add celery.
Then crumble bacon into little pieces and put in beans.
Add margarine. I put my beans in pressure cooker and cook 30 minutes after it begins to rattle.
You can cook on stove. Remove pressure cooker after 30 minutes. Fry onion and bell pepper in bacon grease.
Add beans.
Cut sausage into bite size pieces, cook about 30 or 40 minutes longer on top of stove. Uncovered.
Cook rice and serve over beans.
