Roasted Honey Carrots

1 tbsp. firmly packed brown sugar
2 tbsp. butter or margarine
2 tbsp. honey
4 cups baby carrots, peeled
2 tbsp. water
to taste salt
to taste pepper
Recipe
Heat oven to 400° F.
Stir together brown sugar, butter, and honey in small bowl until smooth; set aside.
Place carrots and water into ungreased 13x9" baking pan. Cover with aluminum foil.
Bake for 30 - 35 minutes or until carrots are fork tender.
Increase oven temperature to 450° F. Remove aluminum foil; stir in butter mixture. Continue baking for 10 - 15 minutes, stirring occasionally, until carrots are glazed and just begin to brown.
Season with salt and pepper, if desired.
Makes 8 servings.
