BEAN AND POTATO TACOS

1 can vegetarian refried beans
1 large potato
1-2 cups lettuce
Favorite cheese
Favorite spices
Taco shells

Dice your potato into about 1/4 inch squares and then fry the cubes in a little bit of olive oil on medium heat with a lid. Add spices to taste.
While the potatoes are frying, heat your refried beans however you prefer them. Once your potatoes are done, mix the beans and potatoes in a bowl and serve.
Fix your tacoes with lettuce, sauce and whatever else you like on them. Serve with Mexican rice.
This is an easy and tasty recipe for tacos, and it's also a good mix for breakfast burritos. Serves 3-4.
