    Makes 1 quart of whie sauce mix,
    enough for about 8 cups basic white sauce.

    List of Ingredients




    2 Cups instant nonfat dry milk, or 1 1/2 cups of reg dry nonfat dry milk
    1 cup all purpose flour
    2 teaspoons salt
    1 cup butter or margarine

    n a large bowl, combine dry milk, flour and salt. Mix well. With a pastry blender, cut in butter or margarine until mixture resembles fine crumbs, Lightly pack into a large airtight container. Label and store in frig for up to 2 months. Makes 1 quart of whie sauce mix, enough for about 8 cups basic white sauce.

    Whitesauce mix makes:
    Basic white sauce
    cream of chicken soup
    Eastern corn chowder
    Hearty new england clam chowder
    company chicken roll-ups
    Potatoes au gratin


    BASIC WHITE SAUCE
    1/2 CUP WHITE SAUCE MIX
    1 CUP COOL WATER
    PEPPER, HERBS AND SPICES IF DESIRED

    In a small saucepan, combine white sauce mix and water. for a thinner sauce decrese white sauce mix to 1/4 cup, For a thick sauce, increase white sauce mix to 3/4 Cup. Cook over low heat until smooth, stirring constantly. Season with pepper, herbs and spices, if desired. Makes about 1-1/2 Cups sauce.

    VARTIATIONS
    Subsitute milk, tomato juice, or chicken or beef broth for all or part of water.
    CHEESE SAUCE: add 1/2 to 1 cup of shredded cheddar cheese after mixture thickens, stir until cheese is melted curry sauce: add 1 teaspoon curry powder to sauce.

    You can also use this white sauce for hamburger or sausage gravy, and many other ways..easy to spice up and down.
