Hot Mashed Bean Dip

makes 2 cups
List of Ingredients
2 cups drained cooked pinto beans
2 scallions minced
3/4 cup grated Monterey jack chz
1/4 tsp minced cilantro
1 tbsp gr. mild red chile
1/2 tsp salt
1 garlic clove crushed
2 tbsp bacon fat or butter or lard
Recipe
mash the beans add the other ingredients except
the fat and mix well, seasoning with salt and garlic
to taste
heat the fat in a chafuing dish add the mixture
and stir until the chz is melted and the dip is
bubbling
serve warm with freshly made tostadas
leftover dip can be refrozen and used as a filing for
burritos ot tacos or as a layer on nachos
