4 eggs separated
1T Part Skim or low fat ricotta
1T Fat free cream cheese
3T Fat free PLAIN or vanilla yogurt (I use Dannon)
4T Cinnamon
4T Splenda
Spray I Can't Believe It's Not Butter
Recipe
Separate eggs and whip whites to stiff peaks with 1T splenda.
Whip egg yolks with 1T splenda 2T cinnamon, ricotta, 1T yogurt, cream
cheese. Combine whites and yolk mixture.
In a small dish add 2T splenda to 1T cinnamon and mix.
In another small dish mix splenda and cinnamon with some yogurt.
Heat non-stick skillet on med high-to-high heat.
Pour 1/4 cup size pancake. When you start to see the bubbles break
through the top then flip carefully. Cook on other side and remove to
a plate. Spray each pancake with spray margarine. Sprinkle on the
splenda and cinnamon mix and continue to pile them on. When done top
with the dollop of yogurt and cinnamon/splenda mix.
