    Sausage and Jalapeno Cheese Quiche

    1 lb. very lean sausage

    Cajun (or similar) seasoning (optional)

    1 small onion, chopped or thinly sliced

    Olive oil

    Non-stick spray

    3 eggs

    ? cup fat free half-n-half

    8 oz. low-fat jalapeno Monterey Jack cheese, shredded

    garlic powder (optional)

    thin slices of tomato (optional)

    Recipe



    Preheat oven to 350E.



    In a skillet, lightly sprinkle sausage with cajun seasoning; add onions and brown in olive oil until thoroughly cooked, breaking up any large pieces of sausage. Drain well and set aside.



    In a separate bowl, combine the eggs, half-n-half, cheese and garlic; mix well.



    Using a non-stick spray, spray the bottoms and sides of a large 6- muffin tin. Dividing the sausage/onion mix equally, firmly press the meat mixture into the bottoms of each muffin-cup to form a "crust." If desired, place one thin slice of tomato on top of meat mixture. Pour egg mixture over top.



    Bake at 350E for 40-45 minutes or until set and toothpick inserted into center comes out clean. Let cool before removing from muffin tin. These individual quiches can be packaged in ziplock bags or plastic containers and easily heated in the microwave.
