Stuffed Pancakes

Makes 10 pancakes
List of Ingredients
4 ounces low fat cream cheese
1 1/2 teaspoons vanilla
1 Tablespoon (or little less) Splenda
1-cup Old Fashion Quaker rolled oats
1-cup ricotta cheese
3 eggs
3 teaspoons vanilla
2 teaspoons (fresh grated) nutmeg
2 teaspoons cinnamon
1-tablespoon water
1 teaspoon Splenda (if needed)
Non-stick cooking spray
Recipe
Blend (food processor, blender, stick blender, mixer) all three ingredients
til light and fluffy. Set aside.
In a blender or food processor grind the oats, nutmeg, cinnamon, Splenda
until fine flour consistency. Set aside.
Blend ricotta cheese, vanilla, eggs, and water until smooth. Slowly add the
flour to the liquid and a batter will form.
Heat griddle, spray with non-stick spray and then cook batter the same as a
any pancakes
To serve: Place a dollop of the cream cheese mixture between two pancakes
press them down enough to spread the mixture to the edges then top with
fresh fruit (strawberries are wonderful with this) or appropriate syrup.
We have eaten them without the syrup and they are wonderful!
