    An SSing alteration of my Mom's recipe

    Recipe Introduction


    A delicious bacon, cheese, and green chile quiche-like muffin. Great for breakfast and a wonderful accompanyment to a brunch. Freezes and reheats well too. Makes one dozen; double the recipe if you have kids. For non-Somersizers, you may substitute the flour in place of the protein powder, and cottage cheese in place of the cream cheese.

    List of Ingredients




    8 oz. cream cheese, well softened
    5 eggs
    1/2 lb. bacon, cooked and crumbled
    8 oz. Montery Jack cheese, shredded
    4oz. can diced green chiles, drained
    1/4 cup butter, melted
    1/4 cup protein powder (no carbs and non-flavored)
    1 teaspoon baking powder (keep it fresh)
    1/4 teaspoon salt

    Recipe



    Preheat oven to 350 degrees.
    Mix the cream cheese and eggs together and stir until there are no large lumps. Stir in the bacon, cheese, chiles, and butter. Finally add the protein powder, baking powder, and salt, stirring gently. Scoop into muffin pans and bake for 25-30 minutes or until golden.
