Warm Waldorf Chicken Salad

List of Ingredients
- 2/3 cups Raisins
- 3 tbl. sherry vinegar
- 2 tbl. canola oil
- 2 Granny Smith apples, cored and sliced
- 1 cup celery hearts, sliced on the diagonal
- Salt & pepper
- 2 rotisserie chickens, skin removed meat shredded
- 1 cup mayo
Instructions
- Place rasisins and sherry in a small bowl and microwave for about 2 minutes, or until raisins have plumped in the vinegar.
- Heat oil in a large saute pan until smoking. Add apples and celery, season with salt and pepper, saute, stirring frequently, for about 2 minutes, or until hot but crunchy.
- Turn off heat and add the raisins, chicken and mayo to the pan. Toss well to combine. Season with salt and pepper, serve immediately.
