    4 cups pecans
    6 T butter
    6 T sugar
    2 egg whites
    pinch of salt
    ½ to 1 tsp cinnamon (depending on taste)

    Spread nuts into jelly roll pan. Bake in 325° oven for 15 to 20 minutes, stirring frequently. Cool completely in a bowl. Wipe pan clean. Line with aluminum foil. Melt butter in foiled lined pan in 325° oven. In large stainless steel bowl, beat egg whites with pinch of salt until stiff. Stir cinnamon into sugar. Gradually beat the sugar mixture into egg whites until it becomes a thick meringue. Fold cool nuts into meringue mixture making sure they are well coated. Spread nuts over melted butter. Bake in 325° oven 30 minutes, stirring every ten minutes with a wooden spoon. Remove from oven to wire rack and let cool completely. Stire in an airtight container.
