    Best Ever Banana Bread

    List of Ingredients




    1 3/4 cups flour
    1 1/2 cups sugar
    1 tsp salt
    1 tsp soda
    2 eggs
    2 ripe bananas, mashed (1 cup)
    1/2 cup oil
    1/4 cup plus 1 T buttermilk
    1 tsp vanilla
    1 cup chopped pecans

    Recipe



    In a large bowl, stir together flour, sugar, soda and salt. In another bowl combine eggs, bananas, oil, buttermilk and vanilla; add to flour mixture, stirring just until combined. Fold in nuts. Pour into greased 9x5x3 baking pan. Bake at 325° for 1 hour and 20 minutes until bread tests done. Cool on wire rack.

    Yield: 1 loaf.

    Note: Does not double well.
