    1 cup self rising cornmeal
    3/4 cup self rising flour
    1/2 tsp salt
    1/4 tsp cayenne pepper
    1/2 cup vegetable oil
    2 eggs
    8 oz cream style corn
    8 oz sour cream

    Recipe



    Preheat oven to 375°. Grease 12 cup muffin tin. In a large bowl stir together cornmeal, flour, salt and cayenne. In another bowl beat together oil, eggs, sour cream and corn until well blended. Add corn mixture to flour and stir just until mixed.
    Pour into prepared muffin tins about 2/3 full. Bake until golden brown about 18 minutes.

    I cook mine just a little bit longer.
