    Chocolate Red Velvet Layer Cake

    This makes a BEAUTIFUL cake. I baked it for a small wedding.

    List of Ingredients




    1 cup butter, softened
    2½ cups sugar
    6 large eggs
    3 cups flour
    ¼ tsp soda
    8 oz. sour cream
    2 tsp vanilla
    3 T cocoa
    2 (1oz) bottles red food coloring

    CREAM CHEESE FROSTING

    3 (8oz.) package cream cheese
    ¾ cup butter, softened
    3 (16oz) packages powdered sugar
    3 tsp vanilla

    Recipe



    Beat butter at medium speed with an electric mixer until creamy. Gradually add sugar, beating until light and fluffy. Add eggs, one at a time, beating just until blended after each addition. Sift together flour, soda and cocoa. Add to butter mixture alternately with sour cream, beating at low speed just until blended, beginning and ending with flour mixture. Stir in vanilla and food coloring. Use batter immediately.
    Spoon batter evenly into 6 greased and floured 8 inch round foil cake pans. Bake at 350° for 18 to 20 minutes. Cool in pans on wire rack 10 minutes; remove from pans, and let cool completely on wire rack. Spread cream cheese frosting between layers and on top and sides of cake.

    FROSTING

    Beat cream cheese and butter at medium speeed with an electric mixer until creamy. Gradually add powdered sugar, beating until light and fluffy. Stir in vanilla.

    Note: If you can only bake 3 pans at one time. Fill all six pans and let three sit on counter until first three have baked.
