    List of Ingredients




    ¼ cup cornstarch
    2/3 cup sugar
    ¼ tsp salt
    2 cups milk
    3 slightly beaten egg yolks
    2 T butter
    ½ tsp vanilla

    Recipe



    Combine cornstarch, sugar and salt. Beat egg yolks slightly and add milk. Slowly combine egg mixture with dry ingredients. Cook in microwave until thick. Usually takes about 6 minutes. Check every two minutes. Add butter and vanilla. Cool. Pour into baked pie crust. Prepare meringue.

    BANANA: slice 3 bananas in shell, add filling

    BUTTERSCOTCH: substitute 1 cup brown sugar (dark brown if you prefer more butterscotch taste) for 2/3 cup granulated sugar, increase butter to 3 T.

    CHOCOLATE: increase sugar to 1 cup, melt two 1 oz. squares unsweetened chocolate and add to eggs and milk.

    COCONUT; add 1 cup coconut to filling, sprinkle ½ cup coconut over meringue before baking

    PINEAPPLE: add ½ cup thoroughly drained, crushed pineapple to cooled filling.
