    Calhoun's Twice Baked Potato Casserole

    List of Ingredients

    7 large baked potatoes
    1 stick butter, melted
    1 cup sour cream
    8 oz. bottle Ranch dressing
    8 oz. grated Cheddar cheese
    Bacon bits to taste
    ½ cup chopped green onions
    ½ tsp salt
    ½ tsp white pepper

    TOPPING

    2 cups corn flakes crumbs
    ¼ cup melted butter

    Recipe

    Cut baked potatoes in half lengthwise and scoop out pulp.
    Place pulp and 1 stick melted butter in large bowl. Mix until pulp is smooth, with only a few lumps. Add remaining ingredients and mix until blended. Do not over mix.
    Spread mixture into a 13x9 casserole dish.
    Mix cornflakes and melted butter. Spread on top of casserole.
    Bake covered at 350° for 20 minutes. Uncover and cook an additional 5 minutes.

    NOTE

    I did not use the topping, instead I used the 8 oz of grated Cheddar cheese on top.
