List of Ingredients
½ stick butter
4 boneless, skinless chicken breasts, cut into pieces
1 package good smoked sausage, casing removed and sliced
1 medium onion, chopped
1 cup chopped celery
½ cup diced green bell pepper
1 T minced fresh garlic
1 small can tomato sauce
1 large can diced tomatoes
2 bay leaves
2 T Chef Paul Prudhommes Poultry Magic seasoning
2 cups chicken broth
cooked rice
Recipe
In a large Dutch oven, melt butter; add chicken and cook until chicken is almost done. Add sausage, onion, celery, bell pepper and garlic. Cook, stirring often, until sausage takes on some color and the vegetables are tender. Add tomato sauce, diced tomtoes, bay leaves and seasoning. Pour in chicken broth. Bring mixture to boil, reduce heat and simmer 30 to 45 minutes. Serve over hot rice.
You can add rice to soup if desired.
