    Spanakopita Triangles

    I did alot of searching to find the perfect recipe, then had to just make my own. This one tastes good and is fairly easy, as a recipe using filo dough can be. I have alot of friends into middleeastern cooking and these little guys were a hit.

    List of Ingredients

    Filling
    2 T butter
    1 lb frozen spinach, thawed and drained
    3 med green onions, sliced
    3 T minced parsley
    2 T chopped fresh dill
    1/4 cup fresh parmesan, grated (not shredded)
    1/2 lb tomato basil feta cheese, crumbled
    3 eggs, lightly beaten
    salt & pepper to taste
    ------------------------------------------------------------
    Pastry
    1 lb filo pastry( found on your grocers freezer isle)
    1 can butter flavor or olive oil pan spray

    Recipe

    1. In butter, saute green onion until soft.
    2. Mean while, squeeze out all excess moisture from spinach and chop up by hand or in food processor.
    3. Combine onions, spinach and remaining ingredients in a bowl. Mix well, your hands work best, and set aside.

    4.Lay out filo sheets, covering them with wax paper and a damp towel. Don't let them dry out.
    5. Take out 2 sheets at a time and keep the rest covered. Spray the top sheet with pan spray. Cut each double sheet crosswise into equal strips, about 2 1/2" wide.
    6. Place 1 teaspoon of the filling 1' from the end nearest you. Fold the strip back over the filling so the bottom meets the left edge, forming a right angle. Continue folding back at right angls to make a triangle shape.(You remember making paper footballs in school right)Repeat the process until you run out of filling. Place on a baking sheet and keep covered until all are ready to bake.
    7. Spray the top of them with pan sray and bake in a 350 oven for 20 to 25 minutes or until golden and crisp, turning once.
    **Spanakopitas may be frozen before baking. When ready to bake, seperate while they are still frozen, spread out on baking sheet and bake as above, allowing an extra 10 minutes baking time.
