    Sugared Citris Strips

    2 large grapefruit or 3 large oranges
    cold water
    3 c sugar
    1 c water

    Recipe



    1. Remove peel from fruit in long continuous strips; cut into 1/4 x 1 1/2 inch strips.
    2. In medium saucepan, cover peel with cold water. Bring to a boil and cook until tender, pouring off water and adding fresh cold water several times; drain. Remove peel from water. With spoon, remove white inner portion of peel.
    3. In medium saucepan, combine 2 cups of the sugar, 1 cup of water and peel. Cook over low heat until peel appears candied and almost transparent. Remove peel 2 or 3 strips at a time; allow excess syrup to drain back into saucepan. Roll citris strips in remainig 1 cup of sugar until well coated. Place on wire rack; let dry about 4 hours. Store in airtight container.
    Makes 8 to 10 ounces.
