    Lamb with Apricot

    I serve this over rice.

    List of Ingredients




    2 lbs boneless leg of lamb, trimmed of fat
    1/4 c honey (my favorite is fireweed)
    1 lrg onion, chopped
    2 lrg cloves or garlic, pressed
    1 cinnamon stick
    2 T lemon juice
    1 1/2 t tumeric
    1/2 t salt
    1 c dried apricot
    1/4 to 1/2 c water (optional)
    lemon slice
    cilantro(coriander) sprigs

    Recipe



    Cut the lamb into 1 inch cubes. In a 3-3 1/2 quart casserole, combine lamb, honey, onion, garlic, cinnamon, lemon juice, tumeric and salt; cover tightly. Bake in a 350 oven, stirring once or twice, until lamb is very tender when pierced ( 1 1/2 - 2 hrs). About 15 minutes before lamb is done, stir in dried apricots.

    Remove from oven; if mixture seems dry, stir in waster as needed. Garnish with lemon slice and cilantro. 8 servings.
