Chicken Breast in Parmesan
List of Ingredients
4 boned & skinned chicken breast
salt
1 c flour
1 egg
1/2 t olive oil
1/2 c fresh grated parmesan cheese
1/2 c fresh bread crumbs, best if from a firm, quality bread
butter or oilRecipe
1. In one dish, put flour.
2. In a second dish, mix egg, 1/8t salt, and olive oil.
3. In a third dish, mix parmesan and fresh bread crumbs.
4. Pat dry the chicken breasts and coat with salt. Then dredge the chicken in flour. Then dip in the egg mixture. Finally coat in the bread mixture, pressing the coating on real good.
5. Heat a skillet, and cook in butter. It's best to start with a med heat, then turn up higher to crisp the coating.
Don't cover the skillet or you crust will get soft.
