Chicken Breasts with Shitake Mushrooms a

List of Ingredients
4 Oregon grown chicken breasts, boned and skinned
1/3 -1/2 pound shitake mushrooms, sliced
1 clove of garlic, minced
Butter
1/2 to 1 cup chicken stock (preferably homemade)
1-2 tablespoons chopped parsley
2 large handfuls chopped fresh spinach
Salt and pepper
1 egg yolk
1/4 - 1/3 cup whipping cream
Recipe
Sauté garlic lightly in a tablespoon of butter, then add shitakes and sauté lightly. Remove mushrooms and garlic, add more butter if needed and sauté the chicken until light brown. Add some chicken stock, parsley and spinach; season with salt and pepper. Cook until chicken is just done, about 10 minutes. Remove chicken and keep warm. Replace mushrooms and garlic. Add some whipping cream into which you have whisked one egg yolk and cook to a nice consistency.
Onto four warm plates, spoon spinach and shitake mixture. Place chicken breasts on top and garnish with a little chopped parsley if desired.
