    Chicken Goulash

    List of Ingredients




    3 lb chicken, cut up
    flour
    salt
    butter
    4 med onions, chopped
    2 cloves garlic, chopped
    1 1/2 t chili powder
    1 can beef consomme'
    1 lb zucchini, sliced
    2 med tomatoes or 1 can chopped stewed tomatoes
    2 carrots, sliced or 1/2 lb baby carrots

    Recipe



    1. Toss together, chicken 1/4 c flour & 1t salt. In a 8 qt. dutch oven , heat butter and brown chicken. After you have browned chicken, saute onion and garlic in reserved pan drippings.
    2. In a small bowl, beat together 1 T flour, 1 t salt, chili powder, consomme and stewed tomatoes. Pour over chicken ( which has been put back in the dutch oven), and simmer 30 minutes.
    3. Add carrots & zucchini and simmer 20 more minutes.
    ** I serve this with white rice.
    ** I don't care for zucchini, so I leave it out, I also use tomato sauce instead of tomatoes.
    ** I also thicken the sauce with flour before I serve it, so it will really stick to the rice. If there is leftover sauce I will freeze it for next time.
    This is another one of my comfort foods.
