    Chicken Giblet Pilaf

    List of Ingredients




    Part 1
    1 1/2 lb chicken gizzards
    1 lb chicken liver
    1 stalk celery w/ laeves, chopped
    1 sm onion, chopped
    salt and pepper to taste
    1/2 t celery seed
    1/2 t sage
    2 T chopped parsley
    Part 2
    1 1/2 c white rice and/or cracked wheat
    3/4 c vermicelli, broken into 1/2 inch pieces
    2 1/2 T butter
    3 c chicken broth

    Recipe



    Part 1
    1. Put all part 1 ingredients, except livers, in dutch oven,
    cover with water and simmer.
    2. When 1/2 cooked add livers.
    3. When giblets are cooked, remove from heat, cool, and cut up.
    Part 2
    1. Melt butter over med. heat, add vermicelli & rice & wheat.
    Saute until golden brown.
    2. Add broth, bring to a boil, cover and reduced heat. Simmer 25 min or until rice is tender and liquid is absorbed.
    3. Add cut up giblets. Serve immediately, or cover to keep moist until ready to serve.
