Curried rice pilaf

1 tb butter
1 c chopped onion
1/2 c chopped celery
1 ts curry powder
1 ts chopped garlic
1 c rice
1/2 c dried cranberries
1/8 ts freshly ground white pepper
2 c chicken stock
1 tb butter
2 tb chopped green onions
1/2 c cashew pieces
salt; to taste
freshly-ground black pepper; to taste
Recipe
In a medium saucepan, heat butter and cook onion, celery, curry powder and garlic until tender. Add rice, cranberries, pepper and chicken stock. Stir well. Bring to a boil, cover and reduce the heat. Simmer for 15 minutes or until the rice is tender.Saute green onions and cashews in butter. Fold in the green onions and cashews; season to taste with salt and pepper. This recipe yields 6 servings.
