    Jicama Spinach Salad

    This is so good with pomegranate seeds

    List of Ingredients

    1 med jicama
    10 oz fresh spinach, torn into bite size pieces(10 cups)
    1 cup sliced strawberries or the seeds of 1 pomegranate


    DRESSING
    1/4 c lime juice
    3 T honey
    2 T oil

    Recipe

    1.To make jicama cutouts, peel jicama. Cut into 1/4 inch slices. Using canape' cutters, cut desired shapes from slices.
    2. In a large bowl, gently toss spinach, strawberries and jicama cutouts; refridgerate until serving time.
    3. In a small bowl, combine all dressing ingredients; blend well. Cover and refridgerate 1 hour to blend flavors. Just before serving, toss salad with dressing.
    Makes 8 1 1/2 cup servings
