Taco Salad
This is the standard recipe we used in the deli, though may want to do some tweaking as I have with it. Some times I use turkey, for those who doen't eat red meat. I add more beans, because I love them. I used to use the Taco flavor doritos, when they made them.
And I was so glad when they started selling pre-cut salad mix. The reason we added the seasoning mix at the end, was so it would coat all the ingredients instead of just the meat. It spreads out the salt so you don't get salty bites of meat. You can cut the olive if you'd like, but I never wanted that much work.
This was a very popular salad at the Fred Meyer Service Deli's when we used to make it.
List of Ingredients
1 lb ground beef or ground turkey
1 lb iceburg lettace, or a 1lb pkg salad express garden salad mix
1/2 lb shredded cheddar cheese, or a mixed mexican style
1 bunch green onion, chopped
4 roma tomatoes, cut into 8 wedges
1 can kidney beans
1 can of sm ripe olives
1 pkg taco seasoning
1 13 1/2 bag doritos, nacho cheese style, crushed
1 16 oz. bottle of Katalina dressing
Recipe
1.Cook beef, crumbling it, and set aside to cool.
2.In a very lrg mixing bowl, add lettace, cheese, green onion, tomatoes, beans and olives.
3.When meat is cooled and to salad and thouroughly mix. Add taco seasoning and mix agian.
4.Just before serving, add doritos and katalina dressing and mix. This way the chips are still crisp.
