    Dill Caper Sauce for Poached Salmon

    List of Ingredients




    1 C plain yogurt(see note)
    2 to 3 T fresh lemon juice
    2 to 3 T capers(and some of their juice)
    *milk or half-and-halk to thin to a to-taste consistancy
    *white pepper and kosher or sea salt to taste
    2 to 3 T chopped fresh dill
    3/4 t chopped fresh tarragon(rubbed between fingers to release the herb's oils)

    Recipe



    Mix together the yogurt, lemon juice, capers, milk or half-n-half, white pepper and salt, dill and tarragon in the order listed and let sit on counter while you prepare fish,stirring occasionally and letting the flavors meld. After 30 minutes, taste again for seasonings and adjust to taste.

    **NOTE** A slightly sweet yogurt works well; Nancy's brand may be too sour for some tastes.
