This is a great soup for a cold winter day. It's a meal in itself. I make a big pot and freeze it.
List of Ingredients
3 meduim potatoes, finely sliced
9 cups water
1 medium onion, chopped
2 T olive oil
3 beef bullion cubes
1 lb chorizo sausage
1 pkgs. sweet italian sausage
1 can kidney beans
1/2 small head cabbage, chopped
4 cups kale, chopped (1 bunch)
1/2 c chablis wine
salt and pepper to taste
1-1 1/2 t fennel seed
Recipe
1.Start cooking the potatoes in the water, salted.
2. Saute onions in oil. Pierce the italian sausage, and add to the pan with the onion. Only partially cook the sausage.
3. Add the bullion cubes and chorizo sausage to the potatoes and water. Add the onions and pan dripping to the soup,
3. Slice the italian sausage into 1/4 inch slices and add to the soup. Simmer 30 minutes.
4. Add kidney beans, cabbage, kale, fennel seed, salt and pepper. simmer covered 30 minutes or more.
