PA Dutch Corn Fritters

2 cups cooked corn
1 and 1/2 cup flour
3/4 teaspoon salt
2 teaspoon baking powder
2 eggs
1/2 cup milk
confectioner's sugar
Recipe
Sift flour, salt and baking powder into bowl. In a separate bowl, beat eggs, then add milk. Stir egg mixture into dry ingredents, beating until smooth. Add the corn--fresh cooked off the cob is best. Stir well and drop by spoonfuls into hot (370 degrees) fat. Fry until golden brown. Drain on paper towels. Keep warm in oven until ready to serve. Roll in confectioner's sugar. Makes 4-6 servings. Also good with syrup.
