    1/3 cup butter, softened
    2/3 cup sugar
    2 tsp. baking powder
    1/2 tsp. salt
    2 eggs
    1 tsp. vanilla extract
    2 cups flour
    1/2 cup sliced almonds

    Beat butter on high speed 30 seconds. Add sugar, baking powder and salt. Beat in eggs and vanilla until combined. Beat in as much flour as you can with the mixer; stir in remaining flour. Stir in almonds.
    Divide dough into 3 portions. Shape each into an 8-inch log (about 2 inches wide). Place on greased cookie sheets.
    Bake at 375 degrees for 20-25 minutes or until golden brown. Cool 30 minutes.
    Slice each log diagonally into 1/2 inch slices. Place slices, cut side down, on cookie sheets. Bake at 325 degrees for 8 minutes, turn slices over, bake 8 minutes more. Cook on wire racks.
    **For chocolate drizzle, melt 1/2 cup chocolate chips with a little shortening; dip biscotti into chocolate or drizzle over biscotti.**
