Rob's Rice Pilaf
List of Ingredients
- 2 Tbs Butter
- 1/4 C onions chopped
- 1 C White rice
- 2 C Low Sodium Chicken Broth
- 1/4 C jalapenos chopped
- Pepper to taste
Instructions
- Melt the butter in a heavy sauce pan
- Add chopped onion and saute until translucent
- In another pan bring the chicken broth to a boil
- Add Rice to the onion and stir until coated with the butter
- Pour the boiling broth over the rice and bring back to a boil
- Lower heat and cover with a tight lid, cook for 20 minutes
- Do Not uncover until done.
- After 20 minutes remove from heat & stir in chopped jalapenos and cover for 2-3 minutes
- Makes 2-3 servings.
