Coconut Cake

Recipe Introduction
Alisa said her mom used to make this cake for special occasions. It's especially yummy if you love coconut!
List of Ingredients
1 yellow cake mix
1 small box of jello vanilla pudding
1 1/3 C. water
4 eggs
1/3 C. oil
2 C. flaked coconut
1 C. chopped nuts - either walnuts or pecans
Frosting:
4 T. butter
2 C. coconut
1 8-oz. pkg. cream cheese
2 t. milk
3 1/2 C. xxx sugar
1/2 t. vanilla
Recipe
Blend cake, pudding, water, eggs and oil in large bowl. Beat with mixer 4 minutes. Stir in coconut and nuts. Pour into 3 greased and floured 9 inch layer pans. Bake at 350 for 35 minutes. Cool 15 minutes then turn onto rack. Fill and top with Frosting.
Frosting:
melt 2 T. butter in skillet. Add coconut and stir constantly over low heat until golden brown. Spread coconut on absorbant paper towels to cool. Cream 2 T. butter with cream cheese. Add milk; beat in sugar gradually. Blend in vanilla; stir in 1 3/4 C. of the coconut. Spread on tops of cakes. Stack and sprinkle with remaining coconut.
