This has been a LONG TIME family favorite. It's almost moved into the "comfort food" catagory! 1/8th of 9x13 pan = approx. 8 pts.
List of Ingredients
Broccoli, cut into small pieces, steamed
3 chix breasts, cooked and diced
3 C. cooked rice
1 can cream of mushroom soup
1/2 C. mayo
1 T. lemon juice
1 C. water
1 t. curry
6-8 pieces sourdough bread, cut into 1/2 inch bite-sized pieces
2 C. grated cheddar cheese
Recipe
Mix mayo, soup, lemon juice, water and curry together. Spray 9x13 pyrex with cooking spray. Layer rice on bottom of pan, then chicken, then broccoli. Spread mayo mix over broccoli. Sprinkle bread, then cheese. Bake 350 for one hour.
