    Gina's Chix Pot Pie

    Recipe Introduction

    Gina, the great chef, makes her own pie crust. Mom, the haried homemaker just uses frozen pie crust. I buy two packages (for 4 pies) and use one bottom crust and then I put another bottom crust on the top! I do this twice to make two pot pies! These freeze very well (wrapped in foil and place in Tupperware).

    List of Ingredients

    1/2 C. chopped onion
    1/2 C. chopped celery
    6 T. butter
    1/2 C. flour
    3 C. chix broth
    3 C. cooked, cubed Chix (or turkey)
    1 10-oz pkg. frozen peas and carrots mix
    **optional - may add diced potatoes

    4 frozen pie crusts, or make your own!

    Recipe

    Cook onion and celery in butter until tender but not brown. Blend in flour and 1 t. salt. Add broth gradually. cook until thick and bubbly and smooth. Add remaining ingredients. Heat until bubbly. Pour into pie shell and cover with another pie shell. Pierce top shell several times. Cook at 400 for 35 minutes (on a cookie sheet). Let stand for at least 10 minutes before serving.
