    Coal Miners Stew

    Source of Recipe

    Laurie

    Recipe Introduction

This is a bit different from the original Laurie gave me, but it's still an easy, cheap and yummy one-dish meal!

    List of Ingredients

    6 large potatoes
1 bag coleslaw mix (or 1 head cabbage, shredded)
    1 bunch green onions, chopped
1 lb ham, precooked, and chopped into small pieces
    1 stick (1/2 cup) plus 2 T. margarine
    1 1/2 c. milk

    Recipe

Peel and cut up potatoes. Place in boiling water until soft. Drain. At the same time, put cabbage in boiling water and let boil for about 10 minutes. Drain. Mash potatoes until smooth. Add 1 stick of margarine and milk. Stir until smooth and creamy. Add ham, onions and cabbage. Heat through. Season with salt and pepper.
