Great lasagne!
List of Ingredients
1 c. chopped onion
1/2 c. diced carrot
1/2 c. diced celery
3 cloves garlic
2 T. olive oil
1 28 oz. can chopped tomatoes
2 T. lemon juice
1 sm. can tomatoe paste
1 T. oregano
1 T. rosemary
1 t. basil
1/2 t. thyme
1/2 black pepper
2 c. sliced mushrooms
1 T. br. sugar
1 pint cottage cheese
3/4 lb. thinly sliced motzarella chs.
Parmesan chs.
1 pkg. frozen chopped spinich, drained
1/2 pkg. cooked lasagne noodles
Recipe
Saute onion, carrots, celery and garlic in olive oil. Add tomatoes, lemon juice, tomatoe paste and seasonings. Cover and simmer for several hours, or cook in crock pot all day. Add mushrooms and brown sugar. Simmer until thick. Stir in cottage cheese. Place a few spoonfuls of sauce in the bottom of a 9x13 pan. Place enough noodles to cover in bottom. Smooth 1/3 sauce over noodles. Sprindle with motz and parm cheese. Add layer of spinich. Repeat so you have three layers. End with motz and parm cheese. Bake at 350 for 30-40 minutes or until browned and bubbly. Let sit for 10 mins before serving.
