    This is a great summer salad!

    List of Ingredients




    3 C cooked, white rice
    16 oz can black beans, rinsed and drained
    1 - 1 1/2 C cooked fresh corn, or 11 oz canned
    1/3 C chopped green onions
    1/2 chopped red bell pepper
    4 oz can green chilies
    1/4 C chopped fresh cilantro

    Dressing:
    1/4 C olive oil
    2 T fresh lime juice
    1 T cider vinegar
    1 T brown sugar
    1 t chili pwdr
    1 t salt
    1/2 t cumin
    pepper to taste

    Recipe



    In large bowl, combine salad ingredients. Toss to mix. In small bowl, whisk together dressing ingredients. Pour over salad and gently toss to coat. Let stand at room temp, tossing occasionaly for up to 4 hours, or refrigerate until ready to serve.
