    Creamy Chix-Broccoli Soup

    4 pts. per serving. I have doubled and tripled this recipe if this is the main course.

    List of Ingredients




    3 C. broccoli flowerets
    1 14-oz can chix broth
    2 T. flour
    1 t. snipped fresh basil or 1/4 t. dried
    1 C. evaporated skim milk
    1 C. chopped, cooked chix
    salt and pepper to taste

    Recipe



    In a medium saucepan, combine the broccoli and 3/4 C. of the broth. Bring to boiling, then reduce heat and simmer, uncovered for 8-12 minutes or until broccoli is tender. In a Quick-Shake container (Tupperware), combine the remaining broth, the flour and basil. Shake to mix. Stir flour mixture into broth mixture in saucepan. Stir in milk. Cook and stir over medium-high heat until mixture is thickened and bubbly. Cook and stir for 1 more minute. Stir in chix. Heat through.
